Chicken Green Curry
ingredients
- 1 bunch fresh spinach
- 2 tablespoons canola oil
- 1 small onion chopped
- 1 can light coconut milk
- 1 eggplant cut into cubes
- 1/4 cup chicken broth
- 1 tablespoon green curry paste
- 1/4 teaspoon salt
- 1 1/2 pounds boneless chicken breast strips
- 2 tablespoons fresh lime juice

Rinse spinach and remove stems. Cook onion in oil over medium heat (about 5 minutes, stirring)

Stir in coconut milk, broth, curry paste, salt and bring to a boil. Reduce heat and simmer for 5 minutes.

Add chicken and eggplant, bring to a low boil then simmer for 8 minutes.

Add spinach, stir, add lime juice and serve over rice.
