Peanut Butter Chicken
My good friend Annette introduced this addictive dish to our family. I love to cook this on the grill, but it can also be baked.
ingredients
- 1/3 cup hot water
- 1/4 cup barbecue sauce
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup chopped cilantro
- 2 Tablespoons dijon mustard
- 1 pound chicken breast strips

Mix all ingredients except chicken. Pour 1/2 of mixture into zip-lock bag with chicken and refrigerate 1-2 hours or overnight. Refrigerate remaining mixture until ready to use.

Grill chicken (on skewers if you like) 7-10 minutes, turning frequently so as not to burn.

Heat unused reserved sauce and serve as dipping sauce.
