Roasted Tomato and Goat Cheese Pasta
ingredients
- 3 vine ripe tomatoes
- 4 cloves garlic
- 1 medium red onion
- 8 oz penne pasta
- 4 oz plain goat cheese
- salt and pepper to taste
- olive oil
directions

Drizzle tomatoes, garlic cloves and onion with olive oil and sprinkle with salt and pepper.

Roast at 375° until garlic and onion are tender.

Cook pasta in well salted water.

Mash roasted vegetables and garlic with fork in large bowl. Add pasta to mixture.

Crumble i goat cheese and mix well.

Add additional salt and pepper to taste.

Serve with toasted baguette slices.
