Beef Stew
Perfect winter meal!
ingredients
- 2 tbsp flour (no more than 1 cup)
- salt and pepper
- 1.5 lb stew beef, cut into small chunks
- 1/3 cup oil
- 1 medium chopped onion
- 2 small cans tomato sauce
- 1/2 tsp oregano
- 3 cups water
- 4 stalks celery, diced
- 5-6 carrots, cut into 1/2 inch pieces
- 5 medium potatoes, cut up
- 1 can peas

1. Place flour, salt, and pepper in a small bag. Add the beef. Shake until well-covered.

2. Heat the oil. Brown the meat 10 minutes, turning often.

3. Add the onion and brown 10 minutes. Pour off extra grease.

4. Add the cans of tomato sauce, oregano, and water. Simmer for 30 minutes.

5. Add the celery, carrots, and potatoes. Add more of each if needed, balance it out.

6. Add more water if necessary.

7. Cook 15-20 minutes on medium heat. In the last 5 minutes, add the peas.

8. Serve with hearty bread so you can “fare la scarpetta”!
