Mincemeat
best made several months ahead and canned
ingredients
- 5 cups ground roast beef
- 12 diced tart apples granny smith)
- 1/3 cup finely chopped orange peel
- 2 large oranges chopped pulp
- 33 ounces currants
- 3 lb raisins
- 2 lbs brown sugar
- 1 Tablespoon salt
- 1 Tablespoon cinnamon
- 1 Tablespoon allspice
- 2 tsp. nutmeg
- 1 tsp. cloves
- 1/4 tsp. ginger
- 1 quart apple cider or grape juice

Mix all together in large kettle.

Simmer 1 hour. Stir frequently to prevent sticking.

place canning jars and lids in a large pot of water and bring to a boil. Pack

hot jars up to one inch of top with mincemeat. Adjust caps. Process jars 20 min. at 10 lbs pressure.

Bake 375 for 20-30 min until bubbling from center
