Potato Gratin
A great compliment to the baby back ribs.
ingredients
- 2 lbs Red Bliss potatoes, unpeeled
- 10 Tbs butter, softened
- 1 cup sour cream
- 1/3 cup bacon, crisped and chopped
- 1/3 cup chopped chives
- salt & black pepper
- 1/3 cup grated Parmesan cheese
directions

In lightly salted water, boil potatoes until tender. Drain and mash potatoes, but do not peel. Add remaining ingredients, except Parmesan, and mix well.

Spoon potato mixture into casserole dish. Top with Parmesan cheese and bake in a 350F oven until hot and lightly browned, about 25 minutes. Remove from oven and brush top of casserole with melted butter.
