Cheesy Chicken Salad
This is a great salad to make when you are tired and hungry. Made with chicken, squash, sun-dried tomatoes and cheese, it’s a rich tasting salad that makes a quick and delicious meal when served on top of pasta or made into a simple and flavorful chicken salad sandwich.
ingredients
- 3 cups cooked chicken (diced)
- 1 cup chayote squash (medium dice)
- 1/4 cup sun-dried tomatoes in oil (drain and roughly chop - use oil from tomatoes for the dressing – see instructions below)
- 2 tbsp capers (rinse and drain before using to reduce salt)
- 1/2 cup Swiss cheese (cubed)
- 1-2 tbsp (or to taste) fresh squeezed lemon juice
