LOBSTER NEWBURG
I found this in “Taste of Gloucester” many years ago. It is good with lobster and/or fish.
ingredients
- 3 T. margarine
- 3 T. flour
- 1/2 t. salt
- 1 1/2 cups milk
- 2 cups cooked, chopped lobster and/or fish
- 1 cup sliced celery
- 2 T. chili sauce
- 2 t. lemon juice
- dash paprika
- parsley
directions

Melt butter or margarine in saucepan

Blend flour and salt

Remove from heat

Gradually add milk. stirring mixture until smooth.

Cook over medium heat, stirring constantly, until mixture comes to a boil.

Reduce heat and simmer 1 minute.

Add lobster, celery, chili sauce, lemon juice and paprika.

Serve on rice or pasty puff

Garnish with parsley
