Fancy-Schmancy Garlic Bread with Bruschetta
As I recall, I was the one who introduced you to making garlic bread with olive oil instead of butter. Anyway, here’s a fancied up recipe!

- 1 baguette french bread
- olive oil
- minced garlic
- basil
- oregano
- parsley
- salt
- 1 pint cherry tomatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 small onion
- lemon juice

Cut garlic bread into slices. Brush with olive oil; sprinkle minced garlic onto each piece. Season with basil, oregano, parsley, and salt to taste. Bake in oven at 450 degrees until brown and crisp.

Meanwhile, dice up (as finely as possible) as much of the tomatoes, bell pepper, and onion as you want (to make however much bruschetta you’re making) and combine them. I started out being slavishly devoted to the idea of a tomato-less bruschetta, which was delicious, but now I’ve come to terms with the fact that it really can’t be called bruschetta without the tomatoes. So include them. Then season with lemon juice and basil, parsley, salt, and oregano to taste, and let it sit in the fridge for awhile. So actually, you should probably do this before you start making the garlic bread.
