CONGO BARS
Sylvia’s Note: I remember that when my mother made these, my two sons, Steven and Bryan, just loved them! Later, when I opened my shop, they quickly became a favorite and remained so for many, many years.
ingredients
- Melt, in a large stainless steel bowl or saucepan:
- 1 cup (2 sticks) butter
- Add:
- 1-1b. box (2 1/4 cups) light brown sugar
- 3 extra-large eggs
- 1 1/2 t. vanilla
- Mix well with a spoon
- Add:
- 2 1/2 cups all-purpose flour
- 1/4 t. salt
- 2 t. baking powder
- Mix until well blended
- Add:
- 2 cups real chocolate bits
- chopped pecans (optional)
directions
Bake in a grease 15 x 10 x 2-inch pan for 20 to 30 minutes in a pre-heated 350 degree oven, or use two sqaure 9 x 9 x 2-inch pans and back for about 25 to 35 minutes (again, at 350 degrees).

Sylvia's Note: Before baking, I sprinkle the tops with chopped pecans, or you can save out a cupful of the chocolate bits and sprinkle those on top, which is what my mother did.
