Ham n' Cheese Egg Bake
Perfect casserole for holiday brunch! Prepare the day before. I’ve made this for many an Easter brunch.
ingredients
- 1 1/2 c shredded cheddar
- > 1 1/2 c shredded mozzarella
- > 1/2 lb fresh sliced mushrooms
- > 6 green onions, sliced
- > 1 medium sweet red pepper, chopped
- > 2 tbl butter or margarine
- > 1 3/4 c cubed fully cooked ham
- > 1/4 c all purpose flour
- > 8 eggs
- > 1 3/4 c milk
- > salt and pepper to taste

Combine cheeses and sprinkle into a greased 13x9 dish.

> Saute mushrooms, onions, red pepper in butter, stir in ham. Spoon over the

> cheese.

> In a bowl, combine flour, eggs, milk, salt, pepper. Pour over ham mixture, cover and refrigerate over night.

> Remove from refrigerator 30 min before baking. Bake uncovered, at 350 for 35-45 min or until a knife inserted near the center comes out clean.

> Let stand for 5 min before serving.
