Chicken Kiev

Early in our marriage, this was the one recipe I made which was very good. Dad, however, thought he could do better, so here is his version. Of course anything is better with Dutch cheese!!!

ingredients

  • 2 or 4 Breasts
  • 2/3 Stick Softened Butter/Margarine
  • 1/4 Cup Lemon Juice
  • tsp Garlic Salt
  • tsp Cayenne Pepper
  • 1/4 Cup Parsley Flakes
  • Egg/Flour/Bread Crumbs (Kikkoman Panko Crumbs are particularly good)
  • Half Cup Shredded Gouda Type Cheese(preferably Dutch)
  • Slices Swiss Cheese (Three for each Breast)

    Using a mixer, blend butter,lemon juice, garlic salt, cayenne pepper, parsley. Mix well and set aside in the refrigerator

    Slice each breast lengthwise and pound each piece until flattened. Roll tablespoon of butter mix and Gouda Cheese and place on flat piece. Fold over and secure with a toothpick.

    Take second flattened piece and fold/cover the first piece and secure with a second and third toothpick.

    Cover each piece with flour/then beaten egg/then bread crumbs. Lightly brown each piece in a fry pan.

    Place in a Pyrex Baking Dish and Bake at 350° for 25 Minutes.

    Place Swiss Cheese and parsley on top of pieces and cook 10 more minutes

  • 7

    Serve with Uncle Ben’s Original Wild Rice and cauliflower.
