Baked Potato Soup

ingredients
- 4 Lg. Baking Potatoes (about 2 3/4 lb)
- 2/3 c Butter
- 2/3 c Flour
- 3/4 t. Salt
- 1/4 t. Pepper
- 6 C Milk
- 1 C sour cream
- 1/4 c. thinly sliced green onions
- 1 lb Bacon, (cooked and crumbled)
- 1 C Shredded Cheddar Cheese
directions
Bake potatoes until tender. Cool completely, then peel and cube. In large pan, melt butter. Add flour, salt and pepper; stir until smooth. Gradually add milk. Bring to a boil, stirring often to prevent burning. Cook and stir until thickened. Remove from hear. Whisk in sour cream. Add cubed potatoes and green onions. Garnish with bacon and cheese.
