Wild Mushroom Pizza

The layers of flavors in this pizza are simply amazing.

ingredients

Pizza
  • 1 pizza dough ball, rolled into two pizzas
  • 3 T chili and garlic oil
  • 2 c (8oz) grated mozzarella
  • 2 c (8oz) grated Fontina
  • 1 recipe caramelized onions
  • 2 T sliced roasted garlic
  • 2 c grilled portabella mushrooms, sliced
  • 1 T rosemary, chopped
  • 4 oz goat cheese
  • 1/4 c parmesan
  • 1/4 c basil, chiffonade
Caramelized Onions
  • 2 T olive oil
  • 1 large red, yellow or white onion, diced
  • 2 T balsamic
  • salt and pepper

    Place a pizza stone on the middle rack of the oven and preheat to 500 degrees.

    Assemble the pizzas, starting with the oil first and saving the basil until after baking.

    Bake until the crust is nicely browned, 10-12 minutes. Sprinkle with the basil and ENJOY!

Caramelized Onions

Heat the oil, add the onion and cook over medium heat, stirring frequently, until lightly browned, about 15 minutes. Add the vinegar and cook 1 minute more. Season to taste.
