Omelet
ingredients
- 2 eggs
- 1 tbls. water
- dash of salt
- dash of pepper (optional)
- pan spray
- butter (optional)
- Desired toppings:
- shredded cheese
- sliced mushrooms
- chopped onions
- fresh spinach
- diced ham
- chopped cooked bacon

Spray a small frying pan (one without a plastic handle since it is going to go straight from the stovetop into the oven) with pan spray and turn on heat to medium. Combine all ingredients in a small bowl and with a fork, beat until all the egg as been incorporated. If desired, add a pat of butter to the frying pan. Once butter is melted and the pan is thoroughly heated, add egg mixture. Turn on oven broiler.

After egg has become a bit set (slightly cooked edges), lift the edges with a silicon spatula and allow the egg to flow underneath. Do this all the way around. Then place the pan into the oven, under the broiler, this will cook the top and make it puff up a bit. Keep a close eye on it and when the last bit of egg is cooked, take it out of the oven and put on all the desired topping and then put it back into the oven to melt the cheese. You can keep the oven door open to watch closely. Once most of the cheese is melted, take it out, fold over, and slide onto a plate. The cheese will continue to melt.

If you are using fresh spinach (my favorite topping), use just a couple leaves and like the cheese, it will continue to cook a bit once it’s been taken out of the oven and folded over. It should wilt a bit.
