HASSELBACK POTATOES WITH HERBED SOUR CREAM
I have never served these that my guest didn’t ask for the recipe!
ingredients
- Medium red new potatoes
- 4 T. butter melted
- 2 T. olive oil
- Kosher salt and freshly ground black pepper
- Herbed Sour Cream
- 1/2 cup sour cream
- 1/2 t. garlic powder
- 1 T. chopped fresh parsley
- Any fresh herbs can be added!
- salt and pepper
directions
Slice potatoes being careful not to slice all the way through. Toss in a medium bowl with butter and olive oil. Place in shallow pan and drizzle remaining butter and oil. Bake until crispy and cooked through, about 1 hour. Baste frequently. Serve with Herbed sour cream.
