Quick and Spicy Tomato Soup

ingredients
- 3 tbsp olive oil
- 2 carrots peeled and chopped
- 1 onion chopped
- 1 clove minced garlic
- 1 jar marinara sauce
- 1 (32 oz)carton chicken broth
- 1 (15oz) can cannellini beans, drained and rinsed
- 1 cup rotini pasta (or any small pasta)
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
directions
Warm the olive oil in a large soup pot over medium high heat. Add the carrots and cook for about 4 minutes. Add the onions and garlic and saute until soft, about 4 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, pasta, red pepper flakes, salt and pepper. Simmer for 15 minutes. Ladle into bowls and serve.
notes
Great served with French bread. I prefer Muir Glen Tomato Basil or Marinara sauce. Try to use natural or organic chicken broth.
