Lemon Meringue Pie

My favorite and Gary’s

ingredients

  • Baked 8“ or 9” Pie Shell
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/8 teasp. salt
  • 1 1/4 cups warm water
  • Grated rind 1 lemon
  • 1/4 cup lemon juice
  • 3 egg yolks, slightly beaten
  • 1 Tablesp. butter or margarine
  • Pie Meringue (3 egg whites)
Pie Meringue
  • 3 egg whites
  • 1/4 tsp salt
  • 1/2 tsp Vanilla extract
  • 6 Tablesp. Granulated sugar
  • Have eggs at room temperature. Place whites in medium bowl; add salt & vanilla; with ellectric mixer at high speed until frothy. Add sugar a little at a time. Beat until stiff peaks are formed. Place mounds of meringue around top edge of filling. Bake 12 to 15 minutes.
