Lemon Meringue Pie
My favorite and Gary’s
ingredients
- Baked 8“ or 9” Pie Shell
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/8 teasp. salt
- 1 1/4 cups warm water
- Grated rind 1 lemon
- 1/4 cup lemon juice
- 3 egg yolks, slightly beaten
- 1 Tablesp. butter or margarine
- Pie Meringue (3 egg whites)
- 3 egg whites
- 1/4 tsp salt
- 1/2 tsp Vanilla extract
- 6 Tablesp. Granulated sugar
- Have eggs at room temperature. Place whites in medium bowl; add salt & vanilla; with ellectric mixer at high speed until frothy. Add sugar a little at a time. Beat until stiff peaks are formed. Place mounds of meringue around top edge of filling. Bake 12 to 15 minutes.
