Roasted Rosemary Potatoes
ingredients
- 2 Tbsp margarine
- 1 onion, sliced into rings
- 7-10 mushrooms, sliced
- 1 Tbsp red wine
- 2 lb potatoes
- 3 Tbsp oil
- 1 tsp rosemary
- 2 tsp garlic powder
- salt and pepper
directions
Preheat oven to 400°. Sauté mushrooms and onions, 5 minutes. Add wine and sauté another 5 minutes. Brush potatoes with oil and spices. Place in pan and drizzle 3 Tbsp oil. Roast uncovered for 1-1 1/2 hours till soft and golden.
