Captain Nick's Steamed Mussels or Clams
You’ll want some slightly crisp garlic bread to soak up the broth.
ingredients
- Fresh mussels or clams - 3 lbs.
- Onion - 1/2 whole Walla Walla sweet
- Olive oil - 1/2 cup
- Garlic - 1/2 head
- Red wine vinegar - 3 shakes
- Tabasco - to taste
- Oregano - to taste
- Basil - to taste
- Butter - 1/2 stick
- Pepper - to taste
- Inexpensive white wine - 1/2 bottle

First clean all the sand from your shell fish by filling a sink with water and wash the shell down, removing and hairs from mussels. Do this a few times until the sand no long is at the bottom of the sink. Discard any opened shells.

Into a large pot or wok add the oil, garlic and onion all minced. Get it hot and add the spices. When it’s real hot add the mussels and walk them around until they just begin to open. Now you can pour in most of the wine (save enough for a glass for yourself), vinegar and the butter. Put the lid on and steam those little critters for about 3 to 4 minutes. When they’re all fully opened you are ready to serve into bowls (so you can include some broth with each serving).
