Baked Coconut Shrimp
ingredients
- 1/4 cup all purpose flour
- 2 Tbl. Packed brown sugar
- 1/4 tsp. salt
- Dash of ground red pepper (cayenne)
- 1 LG. Egg
- 1 cup shredded Coconut
- 1tbl. Lime juice
- 1 lb. uncooked peeled deceived shrimp, thawed if frozen (about 40)
- 2 Tbl. Of butter or stick margarine
directions

1) Heat oven to 425 Spray rack in broiler pan with spray
- 2
2) Mix Flour, sugar, salt and pepper in bowl, beat in separate bowl mix egg and lime juice in 3rd bowl place coconut.

3) Coat each shrimp with flour mixture. Dip into egg coat well with coconut, Place on rack drizzle with butter

4) Bake 7-8 min or until shrimp are firm and golden
