Green Beans with Lemon, Garlic, Parmigiano Gremolata

- Extra Virgin Olive OIl
- 1 1/2 pounds Green Beans, Stem ends trimmed
- Salt and Freshly ground pepper
- 1/2 cup water
- zest of 1 lemon
- 1/2 cup tightly packed parsley leaves
- 3 large cloves garlic
- 1/2 teaspooon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup freshly grated parmigiano-regiano cheese

Lightly film bottom of 12 inch saute pan with oil. Heat over medium high heat. Add beans and a generous sprinkling of salt and pepper. Saute 2 minutes. Add water, immediately cover pan and turn heat to medium low. Cook beans 15-20 minutes, checking often for burning and adding more water if necessary. Beans should be cooked until very tender.

While beans cook, make gremolata by adding lemon zest, parsley, garlic, /2 teaspoon alt and 1/4 teaspoon of black pepper to food processor. Mice together. Stir half of gremolata mixture into cooking beans. Blend the rest with the grated cheese.

When beans are tender, uncover and cook off any liquid. Place in serving bowl and toss with gremolata.
