Carrot Cake with Cream Cheese Frosting

One 13x9 cake or two 9" round cakes

ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups oil
  • 3 tsp cinnamon
  • 2 tsp nutmeg
  • 2 tsp soda
  • 1/2 tsp salt
  • 3 cups carrots (finely grated)
  • 2 cups plain flour
  • .......................................
  • Cream Cheese Frosting
  • 8 oz. cream cheese
  • 1 stick of butter or margarine
  • 2 tsp of vanilla
  • 4 cups sifted confectionery sugar
  • 1 cups chopped pecans (optional)

Carrot Cake Instructions

    Beat eggs first, then add sugar and oil. Then add all remaining ingredients. Butter and flour your cake pan before pouring batter.

    Bake in 350° oven for 45 minutes in either an oblong glass pan or in 2 9" round cake pans.

Cream Cheese Frosting Instructions

In small mixing bowl, combine cream cheese, butter and vanilla. Beat at low speed on electric mixer till light and fluffy. Gradually add sugar, beating till fluffy. If necessary add milk to make of spreading consistency. Stir in chopped nuts or press onto cake after it is frosted.
