Sesame Chicken Stir-Fry
ingredients
- 1 lb. boneless skinless chicken breasts, cut into 1" pieces
- 4 tsp soy sauce
- 1/2 cup sherry (dry)
- 2 tsp cornstarch
- 1 tbsp peanut oil
- 6 oz. snow peas
- 4 garlic cloves
- 1 tsp chili paste
- 8 oz. sliced bamboo shoots, drained
- 8 oz. water chestnuts, drained
- 1/4 cup low sodium chicken broth
- 2 tbsp sesame seeds, toasted
- 3 green onions, sliced
- 1 tsp oriental sesame oil
- Steamed Rice for serving

Place chicken, soy sauce, sherry & cornstarch in bowl & stir. Let marinate for 20 minutes.

Heat peanut oil in wok or large skillet over medium heat. Add snow peas, garlic and chili paste. Stir-fry for 30 seconds. Add chicken with marinade & stir-fry for 3 minutes. Add bamboo shoots & water chestnuts, Stir-fry until chicken is almost cooked through, (about 2 minutes). Mix in broth. Add sesame seeds & green onions; Stir-fry 30 seconds. Stir in sesame oil.
