Makes 12 dollar-sized or 8 4" pancakes

ingredients

  • 1 1/4 cups sifted all-purpose flour
  • 2 tsp. baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt
  • .......................................
  • 1 beaten egg
  • 1 cup milk
  • 2 tbsp salad oil or melted shortening or bacon fat

Pancake Instructions

  • 1

    Sift together flour, baking powder, sugar, and salt. Combine egg, milk, and salad oil; Add to dry ingredients, stirring just until flour is moistened. (Batter will be lumpy)

    Bake on hot griddle.

Buttermilk Pancakes Variation

For Buttermilk pancakes substitute buttermilk for sweet milk in above recipe. Add 1/2 tsp soda and reduce the baking powder to 2 tsp.

Feather Pancakes Variation

For Feather Pancakes reduce flour to 1 cup. Increase baking powder and sugar to 2 tbsp each. Add the sifted dry ingredients to the liquid mixture; beat smooth.
