Baked potato soup

ingredients

  • 2-3 large baking potatoes, microwaved
  • cooked, crumbled bacon
  • 1/4 cup butter
  • 1 small chopped onion
  • 1/4 cup all purpose flour
  • 1 can evaporated milk
  • 1 can chicken broth
  • shredded cheddar cheese

directions

Saute onion in butter. Stir in flour to make a roux. Gradually stir in broth and evaporated milk. Scoop potato pulp from one potato, mash, and add to broth mixture. Dice remaining potato, and add to soup. Season with salt, pepper, and garlic powder to taste. Cook over medium heat until mixture just comes to a simmer. Top each serving with cheese and bacon. If desired top with green onions and sour cream as well.
