Soba Noodle Salad
Add shrimp to make it a tasty meal!
ingredients
- 1 tsp sesame oil
- 1 tsp canola oil
- Zest and juice of 1 orange
- Juice of 1 lime
- 2 T honey
- 2 T soy sauce
- 1 clove garlic, crushed
- 1/2 tsp pepper
- 1-2 T fresh ginger, diced
- 1/4 lb soba noodles, cooked and drained
- 2 T toasted sesame seeds
- 2 - 3 cups watercress or 1 c blanched sugar snap peas
- 1 c shredded carrots
- 1/2 c chopped cilantro
directions
Pour all dressing ingredients into a saucepan and reduce until slightly thickened, 2-3 minutes. Toss with noodles and veggies - ENJOY!
