Some folks write poems after a walk under the trees; others invent cocktails. David Moo, co-owner of and head bartender at the Brooklyn bar Quarter, created this potent cocktail as an ode to the New England woods he grew up around. A tasty follow-up to his Northwood #1, it contains apple cider (freshly pressed, of course), maple syrup (currently the natural sweetener of choice for mixologists), and rum (in the mid-1700s, there were 60 rum distilleries in and around Boston). We’ll take it over a poem anytime.

ingredients

  • 3 tablespoons gold rum
  • 2 tablespoons brandy
  • 1 1/2 tablespoons apple cider
  • 1 teaspoon pure maple syrup (preferably Grade B)
  • 3/4 teaspoon fresh lemon juice
  • Ice cubes
  • 2 thin apple slices

directions

Combine first 5 ingredients in cocktail shaker; fill with ice. Cover and shake vigorously until cold. Strain into 2 coupe glasses. Cut slit in each apple slice and attach to rim of each glass.
