My Fabuloso Potato Salad
This is a family staple at Nonna and Grandpa’s backyard barbecues. I make a double batch for Uncle Doo Da’s Birthday every year. So Good!
ingredients
- 3 pounds Red Potatoes (about 2-3 potatoes per person)
- 1 Bunch Cilantro, Chopped
- 1 Red Onion, Finely Chopped
- Celery Salt
- 1 cup Sour Cream (More Just In Case!)
- 1 cup Mayonnaise (More Just In Case!)
- 1 can black Olives

Boil Potatoes until fork tender. Drain and let cool.

Chop into bite size pieces.

In a large bowl add potatoes, chopped red onion, chopped cilantro and generous sprinkling of Celery Salt.

Mix Sour Cream and Mayonnaise until completely incorporated. You may need to add more to get desired consistency. Add drained olives and mix. Season with Celery salt to taste.
