Tortellini and Sausage Soup
This is great comfort food on a chilly day!!!
ingredients
- 1 lb Italian sausage, casings removed (can use mild or hot, depending on taste)
- 1 cup coarsely cut onions
- 3 cloves garlic, minced
- 1/2 cup water
- 1/2 cup dry white wine
- 5-7 cups chicken broth
- 1 cup carrots, thinly sliced
- 1 can (28 ozs) crushed tomatoes packed in puree
- l/2 tsp basil (can substitute fresh, but if do, increase amount)
- l/2 tsp oregano leaves (see basil for use of “fresh”)
- 8-9 ozs fresh spinach, rinsed well, stemmed and coarsely chopped
- Salt and pepper
- 1 cup freshly grated Parmesan cheese
- 8 ozs frozen meat or cheese tortellini

1. In a large 5-quart pan, brown sausage. Remove from pan, drain (reserving l tblsp drippings), set. aside.

2. Sauté onions and garlic in reserved drippings until tender.

3. Add water, broth, wine, carrots, basil, oregano. and tomatoes. Bring to a boil. Reduce the heat and simmer, uncovered, for 30 minutes. 4. Add the tortellini and cook til done - about 10-12 minutes.

5. Add the spinach and cook just until wilted, about 3 minutes.

6. Add sausage and simmer a few minutes.

7. Season to taste with salt and pepper. Ladle the hot soup into bowls and top with grated Parmesan.
