Liddy's Lasagna

Makes 8 to 10 servings

This is the recipe that made her famous. It isn’t cheap to make by any one’s standards. However, the love she put into it made it absolutely priceless.

ingredients

Red Sauce
  • 1 lb Italian sweet sausage
  • 1 lb lean ground beef
  • 1 clove garlic, minced
  • 1 tbsp parsley flakes
  • 1 tbsp basil
  • 1 1/2 tsp salt
  • 1 lb. can tomato sauce
  • 2 6 oz. cans (1 1/3 cups) tomato paste
Ricotta Cheese Mixture
  • 3 cups ricotta cheese
  • 2 beaten eggs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp parsley flakes
  • 1/2 cup grated Parmesan Cheese
Other Ingredients
  • 10 oz. lasagna noddles
  • 2 lb mozzarella cheese, sliced very thin

    Brown Italian sausage and ground beef slowly; drain well all the excess fat. Add next 6 ingredients. Simmer uncovered about 30 minutes to blend flavors, stirring occasionally

    Combine ricotta cheese with eggs, seasonings and Parmesan Cheese.

    Cook noodles in boiling salted water till tender; drain; rinse in cold water.

    Line 13X9X2 inch baking dish with one layer of noodles. Spread ricotta cheese mixture on noodles followed by red sauce then mozzarella cheese slices. Repeat this layering until you reach the top of the pan; finishing with mozzarella cheese.

    Bake 45 to 1 hour. If cheese starts to burn cover with aluminum foil. Let stand 10 to 15 minutes before cutting in squares, filling will set slightly.
