Broccoli-Rice Casserole
Mom’s Yummy Casserole
ingredients
- 1 cup white rice/3 cups cooked rice
- 1 can condensed cream of celery or mushroom soup
- 1 cup of shredded cheddar cheese
- 1/2 cup onion - chopped
- 1/2 cup celery - chopped
- 1 package frozen broccoli spears - chopped
- 1/2 cup cold water
- 1/2 stick butter or margerine

Chop broccoli while still partially frozen. Combine with onion, celery, cold water and butter. Boil for 5 minutes.

Combine rice, soup, and cheese in separate bowl. Fold in vegetable mixture.

Turn into a shallow 8X10 baking dish.

Bake at 350° for 30 minutes or until golden brown.
