Sun-Dried Tomato Sausage with Penne and Fresh Basil
ingredients
- 4 Tbsp. extra-virgin olive oil
- 8 links Emeril’s™ Sun-Dried Tomato Sausage, diced into 1/2-inch cubes
- 1 cup thinly sliced onions
- 1 lb. penne pasta
- 1 Tbsp. minced garlic
- 1 12-oz. jar roasted red peppers, drained and rough chopped
- 1/4 tsp. crushed red pepper flakes
- 1/4 cup chopped fresh basil
- 1/2 cup grated Parmesan cheese

1. Cook penne in salted, boiling water until al dente. Drain and keep warm.

2. While pasta is cooking, heat 2 Tbsp. extra-virgin olive oil over medium-high heat in a large skillet for 30 seconds.

3. Add sausage and cook, stirring until edges are browned, about 5 minutes.

4. Add onions and cook, stirring until browned, about 5 minutes. Add garlic, peppers, and red pepper flakes, stirring to blend for 30 seconds.

5. Pour sausage mixture over warm pasta. Sprinkle cheese and fresh basil on top.

6. Drizzle remaining 2 Tbsp. extra-virgin olive oil over pasta to finish.
