Spinach and Cheese Gnocchi Balls à la Gail
I have always liked to cook and I developed an interest in healthier alternatives early on. I found this recipe out of a vegetarian cookbook in the late 70’s and have been making them ever since. In my mind the spinach was a much healthier choice than meat in the balls! These graced my Christmas table every year since and there wasn’t one person that didn’t love them.
ingredients
- 1/2 lb spinach leaves or 10 oz package of frozen chopped spinach
- 3 TBL butter (plus more for brushing)
- 1 cup ricotta cheese
- 2/3 cup grated parmesan
- 3 egg yolks, beaten
- 7 TBL flour, plus more for rolling
- 1/2 tsp salt
- pepper to taste
- pinch of nutmeg
- 1/2 cup grated parmesan
