Spinach and Cheese Gnocchi Balls à la Gail

I have always liked to cook and I developed an interest in healthier alternatives early on. I found this recipe out of a vegetarian cookbook in the late 70’s and have been making them ever since. In my mind the spinach was a much healthier choice than meat in the balls! These graced my Christmas table every year since and there wasn’t one person that didn’t love them.

ingredients

  • 1/2 lb spinach leaves or 10 oz package of frozen chopped spinach
  • 3 TBL butter (plus more for brushing)
  • 1 cup ricotta cheese
  • 2/3 cup grated parmesan
  • 3 egg yolks, beaten
  • 7 TBL flour, plus more for rolling
  • 1/2 tsp salt
  • pepper to taste
  • pinch of nutmeg
  • 1/2 cup grated parmesan

These taste best after they've cooled a bit. Let rest before serving.
