Cheddar Squash Bake

ingredients

  • 6 cups of thinly sliced unpeeled zucchini
  • 2 slightly beaten egg yolks
  • 1 cup sour cream
  • 2 tablespoons flour
  • 2 stiffly beaten egg whites
  • 1 1/2 cups shredded cheddar cheese
  • 6 slices of crisp bacon
  • 1 tablespoon melted margarine
  • 1/4 cup bread crumbs

directions

Cook zucchini in boiling water , salted until crisp and tender. Drain and salt zucchini. Combine yolks, sour cream and flour. Fold in egg whites. Layer 1/2 zucchini and 1/2 egg mixture and cheese in baking dish. Crumble 1/2 bacon over and repeat layer. Mix bread crumbs with butter and sprinkle on top. Bake at 350 for 20-25 minutes.
