SHRIMP COCKTAIL, HONEY DATIL
ingredients
- 1/2 c. Florida honey
- 2 tbsp paprika
- 2 lbs large (16/20 count or larger) Florida shrimp, peeled and deveined
- 1 tbsp chopped Florida datil pepper (or other hot pepper)
- 1 tsp salt
- 2 c. diced (1-inch pieces) Florida honeydew melon
- 2 c. diced (1-inch pieces) Florida mangoes

Combine honey, paprika, pepper and salt in a large skillet. Heat over medium-high heat.

Add shrimp. Simmer 4 to 5 minutes, stirring occasionally, or until shrimp are opaque throughout. Remove shrimp from liquid and chill; reserve honey mixture.

Alternate shrimp with melons and mangoes on wooden skewers.

Place in a glass container and pour honey mixture over shrimp, melons and mangoes.

Refrigerate and serve cold.
