Whole Wheat-Blueberry Muffins
ingredients
- 1/4 cup packed brown sugar
- 1/2 tsp ground cinnamon
- 3/4 cup skim milk
- 1/4 cup veggie oil
- 1/4 cup honey
- 1/4 cup fat free egg product or 2 egg whites
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh or frozen(thawed and well drained) blueberries

Heat oven to 400°. Spray 12 medium muffin cups, with cookig spray, or line with paper baking cups. Mix brown sugar and cinnamon, set aside.

Beat milk, oil, honey and egg product in large bowl with spoon. Stir in flours, baking powder and salt just until flours are moistened (batter will be lumpy). Fold in blueberries.

Divide batter evenly into muffin cups(cups will be full). Sprinkle with brown sugar mixture. Bake about 20 minutes or until golden brown.
