Spicy-Sweet Cole Slaw
ingredients
- 4 cups packaged cabbage and carrot coleslaw
- 1 and 1/4 cups red bell pepper, cut into 2 inch thin strips
- 1/2 cup scallions, sliced
- 1 cup halved grape tomatoes
- Vinaigrette:
- 2 tablespoons prepared horseradish
- 1 tablespoon honey
- 1 tablespoon cider vinegar
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 tablespoon canola oil

In a large bowl combine coleslaw, red bell pepper, scallions and grape tomatoes.

In a small bowl combine vinaigrette ingredient, whisk until well blended.

Pour dressing over coleslaw and toss to coat. Refridgerate about 1 hour prior to serving.
