Father Sarducci's Cheesecake
ingredients
- HAVE ALL INGREDIENTS AT ROOM TEMP
- Butter for the pan
- 1 (15 oz) whole milk ricotta
- 2 cup sour cream
- 16 oz cream cheese
- 1 1/2 cups sugar
- 1 stick butter, melted
- 3 x-large eggs
- 3 tablespoon flour
- 3 tablespoon cornstarch
- 2 scant tablespoon vanilla
- 2 scant tablespoon fresh lemon juice

1. Preheat oven to 350°. Butter 10" spring form pan.

2. Process ricotta till smooth. Add sour cream and cream cheese, process till smooth. Add remaining ingredients and process until well combined.

3. Bake 1 hour. Open over door a bit and let set 1 hour more in over. Then cool on rack.
