Twice Baked Potatoes
ingredients
- 4 large baking potatoes, completely baked and hulled, with pulp set aside
- 1/2 cup whipping cream
- 1/4 cup butter
- 1/2 cup sour cream
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup sliced green onions
- 1 teaspoon garlic salt
- 3/4 teaspoon fresh ground pepper
- 2 slices bacon, cooked and crumbled

Preheat oven to 350°F.

Using a hand mixer, beat potato pulp and whipping cream until whipped. Mix in remaining ingredients (except the bacon) and re-stuff potato hulls.

Bake potatoes until golden on top, about 20 minutes. Sprinkle with crumbled bacon.
