Spicy Tempeh Salad
The salad dressing is one of our favorites - sweet, spicy and tangy at the same time.
ingredients
- 1 package tempeh, cut into thin strips
- 3 tbsp sesame oil
- 2 carrots, julienned
- 2 cups snow peas
- 1 red bell pepper, julienned
- 4 scallions, sliced
- 2 cups red cabbage, shredded
- 1 cup crispy fried Chinese noodles
- 2 cloves garlic, minced
- 1 tbsp sweet chili sauce
- 2 tbsp lime juice
- 1/4 cup of oil

1. Preheat oven to 400°F. Place the tempeh on a baking tray, and brush on both sides with the sesame oil. Bake for 20 minutes.

2. Place the tempeh in a bowl with the vegetables and fried noodles.

3. Whisk together the garlic, sweet chili sauce, lime juice and oil. Pour the dressing over the salad and toss to combine.
