Banana Bread
A versatile recipe that can be made into a loaf, bundt, mini or regular size muffins. Freezes well.
ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 1/2 cups mashed bananas (2-3 ripe or frozen bananas)
- 1 tsp vanilla
- 1 1/4 cups all purpose flour (or 3/4 c all purpose & 1/2 c whole wheat flour)
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup sour cream
- 1 cup rolled oats
- 1 cup blueberries or 1/2 cup pecans

Preheat oven to 350F.

Grease 1 large loaf pan, bundt pan or muffin tin.

Cream butter & sugar well. Add eggs one at a time and continue beating. Add vanilla and mashed bananas. Gradually add sifted dry ingredients alternatively with sour cream. Stir in blueberries or nuts and oatmeal. DO NOT overmix.

Pour into prepared pan.

5) Bake for 60 minutes or more until done. (20 minutes for mini muffins).
