Becca’s Mom’s Day Recipe
ingredients
- 2 3/4 c flour
- 1/2 c sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 12 Tbsp unsalted butter, cold cut into 1/2" cubes
- 1 c dried currants (or cherries)
- 1 Tbsp. lemon zest
- 1 c heavy cream (cold)
- 1 egg blended with 1 T water
- coarse sugar

Preheat oven to 375.

Line baking sheet with parchment.

Combine first 4 ingredients in large bowl.

Blend in butter with fingers. Add fruit and zest; toss to combine. Add cream and mix together with hands until blended. Knead and pat into circle. Cut into 8 wedges; transfer to baking sheet; place ~ 2" apart. Brush with egg/water mixture; sprinkle with sugar. Bake 25-30 mins.
