Pasta & Rice Pilaf {Burnt Pasta!}

ingredients
- 1 Tbs. Olive oil
- 3/4 cup Orzo OR 4 oz. spaghetti, broken into 1 inch pieces
- 1 cup Long-grain white rice
- 3 cups Water
- 1 tsp. Salt

In a large saucepan, heat oil over medium heat.

Add orzo or spaghetti and cook, stirring, until golden, about 3 minutes. Watch carefully since browning occurs quickly. Add rice and stir for 1 minute more. [Toasting pasta and rice before cooking gives them a nutty flavor and golden hue.]

Add water and salt and bring to a boil.

Reduce heat to low, cover and simmer until liquid has been absorbed and pasta is tender, 15 to 20 minutes.

Fluff with a fork before serving.
notes
200 calories per serving. Spaghetti works better. Rice and orzo have the same shape.
