Low Calorie Pumpkin Pie

  • In a large mixing bowl, combine egg, egg whites, pumpkin,sugar substitute, biscuit mix, vanilla and spices until smooth. Gradually stir in evaporated milk. Pour into 9 inch pie pan, sprayed with Pam. Bake at 350 for 35-40 minutes or knife comes out clean. Cool on rack. Dollop with whipped topping.
