Arroz con Pollo (Rice and Chicken)
ingredients
- Chicken Parts
- 1 tomato
- Olive Oil
- 1 onion
- 2 cups Uncle Ben’s Converted Rice (ONLY)
- 1 pkg. saffron
- 5 chicken bouillon cubes
- Garlic powder
- salt/pepper
- OPTIONAL:
- Peas
- Pimentos
- Choritos (spanish sausages)

Coat pot with olive oil then brown chicken for 10 minutes on low flame (covered).

Add 1 chopped onion, 1 chopped tomato and simmer on low flame for 15 minutes (covered).

OPTIONAL: If using choritos, slice and add to pot.

On side, boil 4 cups of water*, 5 chicken bouillon cubes and 1 package of saffron.

After, chicken, tomato and onion are cooked, add 2 cups of rice and boiled water. Add salt, pepper and garlic powder to taste.

Cook on low flame for 25 minutes -- DO NOT uncover pot before 25 minutes.

OPTIONAL: After cooked, for color and flavor, add peas and shredded pimentos.

* 2 cups of water to 1 cup of rice.
