Rice Casserole
We used to make this with squares of American cheese on top years ago, but I have since upgraded to shredded cheddar.
ingredients
- 1 pound ground beef or sausage
- 3/4 cup chopped onion
- Salt and pepper to taste
- 1/4 tsp each oregano and garlic powder
- 1 can diced tomatoes
- 1 can cream of mushroom soup
- 1 cup rice, uncooked
- 1 cup shredded cheddar cheese
directions
Brown meat, add onion and cook until tender. Stir in seasoning, tomatoes and soup. Bring to a boil, then simmer 5 minutes. Cook rice separately, then add to meat. Spoon into baking dish and top with cheese. Bake at 300 degrees until cheese is melted.
