Mom's Blueberry Pancakes
Grandma Cheryl’s comfort breakfast
ingredients
- 1 cup whole wheat flour
- 1/4 cup wheat germ
- 1 tsp baking powder
- 1/4 tsp cinnamon
- 1 1/4 - 1 1/2 cups skim milk
- 1 egg, beaten
- 2 cups blueberries 2 tsp maple syrup
directions

1. Combine the dry ingredients in a medium bowl.

2. Stir the milk into the egg, then add the mixture to the dry ingredients, also adding 3/4 cup of the blueberries. Stir with a spatula just until the ingredients are combined.

3. Pour the batter on a lightly oiled griddle, about 1/4 cup of batter for each pancake. Turn when bubbles appear on the surface. When first batch of pancakes is done, keep them warm while preparing remaining pancakes.

4. To prepare topping, combine remaining blueberries with the maple syrup in a blender. Process on medium speed until combined. The topping can be heated in a small pan over low heat, if desired.

5. Serve pancakes with blueberry topping.
