Crockpot Carnitas
ingredients
- 1 large onion, chopped
- 2 each bay leaf
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 1 cup fat-free chicken broth
- 2 pounds pork loin, lean, boneless, cut in 1" cubes
- 1/2 cup fresh orange juice
- 8 each corn tortillas (I used La Tortilla low-fat, high fiber tortillas)

Mix the cumin, coriander and oregano in a small bowl.

Cut the pork loin into 1" chunks.

Sprinkle seasoning over pork and mix. Place in refrigerator overnight.

The next morning, spray crockpot with Pam.

Spray a skillet with Pam and brown the pork loin chunks on all sides.

Layer pork chunks into crockpot with onions and garlic. Pour chicken broth and orange juice around the outside of the pot, careful to not wash off the seasoning.

Cook on low for 8-9 hours

Serve with tortillas and zero or low point toppings.
