Spicy-Garlicky-Herby Roasted Sweet Potatoes
The title just about says it all. These sweet potatoes are great as a side dish with roasted or grilled meat or salmon, but they make a great part of a vegetarian dinner, as well.
ingredients
- 4 medium sweet potatoes, peeled and cut into 3/4-inch-thick chunks
- 3 tablespoons olive oil
- 4 large garlic cloves, minced
- 1 tsp. dried thyme (or to taste)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon red pepper flakes

Preheat oven to 450°F. In large mixing bowl, combine all ingredients and toss. Arrange potato chunks in asingle layer on a heavyweight rimmed baking sheet or in a 13x9-inch baking dish.

Place on top rack of oven and roast until tender and slightly browned, about 30 minutes, tossing/flipping potatoes halfway through. Serve warm or at room temperature.
HERBAL NOTE:

If you have fresh thyme on hand, by all means use it! I never have it around. But you can use 1/3 cup fresh thyme leaves in place of the dried thyme.
